After talking to a family who just returned from Disney, traveling with kids between the ages of 2 1/2 - 8, here were their favorite restaurants:
1. 1900 Park Fare - Great character interaction between Cinderella, her stepsisters, and Prince Charming.
2. Chef Mickey's - All of the main Disney characters, such as Mickey, Minnie, Goofy, Donald, etc... are at this brunch spot.
3. Hollywood and Vine - Playhouse Disney characters are at this Hollywood Studio's lunch spot, such as JoJo and the Little Einsteins.
And here were their tips:
1. Get fast pass's to "Toy Story Mania" (Buzz Lightyear was a huge hit) at Hollywood Studios right away, or they are sold out before noon.
2. At the Animal Kingdom, the Safari and River Rapids rides were great fun. They did the "child swap" option (their daughter was too short to ride the river rapids ride), so that each parent could ride the rides with the kids back to back, and not have to wait in line separate times.
3. The cheap poncho's they brought with them for rainy times, which didn't last long at all, were too hot to wear.
4. They went to the parks right when they opened each day, and it worked best for them.
5. Each restaurant they went to was buffet, so that the kids didn't have to wait for food when they were tired, and/or hot, and hungry.

Definately have to do the option for the Buzz Lightyear for our little Buzz maniac! I've been reading about the Chef Mickey's as well and it sounds like fun! Thanks for the info!
Best yet...I think Chef Mickey's is at the Contemporary, right? Luckily that is one of the stops on the monorail line closest to our hotel.
